Peanut Butter Protein Pancake Recipe

My workouts were sporadic, but hard this week. I upped the weight I lifted, and tried to be really diligent with eating clean. I wasn't even in the top five of the Biggest Loser contestants at work, despite losing five pounds, so this week, I'm pretty driven, despite sporadic workouts. I'm making up for them today. I even got up early this morning to go to the gym, and do Chest and Triceps. I was going to continue to do Legs and the shoulders and abs, but I didn't eat first. My energy plummeted about halfway through the workout, so I decided to come home and make breakfast.

What'd I have for breakfast? I'm glad you asked.

I'd been dreaming of Pancake Saturday all week. I had plans of changing up this recipe by Alesha Haley (I don't have the Jamie Eason Peanut Protein Powder), but I also didn't have unsweetened applesauce, so I had to change things up a bit.

Instead, I used Julie's recipe for an Egg White Oatmeal Pancake as a base, and jazzed it up myself.

  • What you do is mix all the ingredients EXCEPT the chocolate chips in a blender, magic bullet, or mini processor, and blend until smooth. 
  • Pour half onto a preheated skillet, sprinkle with chocolate chips.
  • Cook for 1-2 minutes per side. Serve with sugar free syrup, or keep plain.
That's it. Pretty easy, pretty tasty. Also, very dense, and not fluffy. I kind of wonder if adding baking powder and salt might fluff them up a bit?

Anyway, the health stats may seem a bit high, but all things considered, check out the protein count. That'll stick to your ribs!
